Honey is a variable, dynamic agricultural product, the sum of both botanical and animal processes and subject to the influences of Mother Earth. Most of the compounds that contribute to the flavor and aroma of honey are volatile and have boiling points below 180° F (82° C); they would therefore be subject to rapid blow-off during boiling. It also would stand to reason that the character these compounds create also would be bound to the colloidal substances held in suspension in unheated and unfiltered honey. Putting it plainly, the closer to the hive (in terms of time and treatment), the more complex and flavorful your honey, and thus your mead, are likely to be.
